Ingredients

- 3 eggs (150g)
- 3/4 cup (150ml) vegetable oil
- 1 1/2 cups (200g) finely chopped carrot
- 1 1/2 cups (275g) sugar
- 1 1/2 cups (205g) all-purpose flour
- 1 tablespoon (14g) baking powder

- 200g dark chocolate
- 1/2 cup (140g) sweetened condensed milk
- 1/2 cup (110g) heavy cream
Instructions
Preparing the Cake:
- Preheat the oven to 350°F (180°C). Grease and flour a baking pan.
- In a blender, combine the eggs, vegetable oil, and chopped carrot. Blend until smooth.
- In a large bowl, mix the sugar and flour. Gradually add the blended carrot mixture, stirring well until combined.
- Add the baking powder and gently fold it into the batter.
- Pour the batter into the prepared pan and bake for 35-40 minutes, or until a toothpick inserted in the center comes out clean.
- Let the cake cool before adding the ganache.
Preparing the Chocolate Ganache:
- Melt the dark chocolate using a double boiler or microwave in short intervals.
- Add the sweetened condensed milk and heavy cream, stirring until smooth and well combined.
- Pour the ganache over the cooled cake, spreading evenly.

- For a richer flavor, add a teaspoon of vanilla extract to the batter.
- Serve with a scoop of vanilla ice cream for an indulgent dessert.
- If you prefer a softer ganache, increase the amount of heavy cream.
