- 1 cinnamon stick
- 3 cloves
- ¼ teaspoon salt
- ¼ cup (50 g) shredded coconut (optional)
- ¼ cup (50 g) roasted peanuts, crushed (optional)
- Ground cinnamon for garnish
Instructions
1. Soak the Corn
- Rinse the white hominy corn and soak it in water for at least 8 hours or overnight. This softens the kernels and reduces cooking time.
2. Cook the Hominy Corn
- Drain the soaked corn and place it in a large pot with 4 cups of water.
- Add cinnamon stick, cloves, and salt.
- Bring to a boil, then reduce heat and simmer for 1-1.5 hours until the corn is soft. Add more water if needed.
3. Add the Milk Mixture
- Once the corn is tender, remove the cinnamon stick and cloves.
- Stir in the whole milk, coconut milk (if using), and condensed milk.
- Cook over medium-low heat for 15 minutes, stirring frequently to prevent sticking.
4. Sweeten and Thicken
- Add sugar and shredded coconut (if using). Stir well.
- Simmer for another 10 minutes until thick and creamy.
