Brazilian Beef and Cassava Stew (Stuck Cow)

Stuck Cow is a traditional Brazilian beef stew made with tender beef ribs and cassava (yucca or manioc), slow-cooked in a rich, flavorful broth. Ingredients

For the Beef:

  • ½ teaspoon cumin
  • 1 teaspoon salt

For the Cassava (Yucca Root):

  • 2 cups cassava (yucca), peeled and cut into chunks
  • ½ teaspoon salt

Instructions

1. Brown the Beef

  • Heat olive oil in a large pot over medium-high heat.
  • Add the beef ribs, searing on all sides until golden brown.
  • Remove the beef and set aside.

2. Build the Flavor Base

  • In the same pot, add onions and garlic, sautéing until fragrant.
  • Stir in paprika, black pepper, cumin, and salt, mixing well.
  • Add tomatoes and tomato paste, cooking until softened.

3. Deglaze and Simmer

  • Pour in white wine (if using) to deglaze the pot.
  • Add beef broth and bay leaf, then return the beef ribs to the pot.
  • Cover and simmer for 1.5 to 2 hours, until the beef is tender.

4. Cook the Cassava

  • In a separate pot, boil the cassava with salt until soft (about 20 minutes).
  • Drain and set aside.

5. Combine and Finish

  • Once the beef is tender, add the cooked cassava to the stew.
  • Simmer for another 15 minutes, allowing the flavors to meld.
  • Remove from heat and sprinkle with fresh parsley.
