Ingredients
For the Beef:
- 2 lbs (1 kg) beef short ribs (bone-in)
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon paprika
- ½ teaspoon black pepper
- ½ teaspoon cumin
- 1 teaspoon salt
- 2 medium tomatoes, chopped
- 1 tablespoon tomato paste
- ½ cup white wine (optional)
- 4 cups beef broth
- 1 bay leaf
- 1 tablespoon fresh parsley, chopped
For the Cassava (Yucca Root):
- 2 cups cassava (yucca), peeled and cut into chunks
- ½ teaspoon salt
Instructions
1. Brown the Beef
- Heat olive oil in a large pot over medium-high heat.
- Add the beef ribs, searing on all sides until golden brown.
- Remove the beef and set aside.
2. Build the Flavor Base
- In the same pot, add onions and garlic, sautéing until fragrant.
- Stir in paprika, black pepper, cumin, and salt, mixing well.
- Add tomatoes and tomato paste, cooking until softened.
3. Deglaze and Simmer
- Pour in white wine (if using) to deglaze the pot.
- Add beef broth and bay leaf, then return the beef ribs to the pot.
- Cover and simmer for 1.5 to 2 hours, until the beef is tender.
4. Cook the Cassava
- In a separate pot, boil the cassava with salt until soft (about 20 minutes).
- Drain and set aside.
5. Combine and Finish
- Once the beef is tender, add the cooked cassava to the stew.
- Simmer for another 15 minutes, allowing the flavors to meld.
- Remove from heat and sprinkle with fresh parsley.
