This Shredded Beef Sandwich, known in Brazil as Carne Louca, is a dish bursting with flavor!
The slow-cooked beef is tender, juicy, and infused with delicious seasonings.

Ingredients
- 500g beef (lagarto or eye of round roast)
 - 50g butter
 - 100ml white wine or beer
 - 1 large onion, finely chopped
 - 1 red bell pepper, finely chopped
 - 10 green olives, chopped
 - 2 ½ tbsp fresh parsley, finely chopped
 - Juice of 1 lemon
 - 2 tbsp extra virgin olive oil
 - Salt and black pepper to taste
 
Instructions
Cook the Beef:
- Bring 1.5 liters of water to a boil.
 - In a pressure cooker, melt the butter over medium heat.
 - Add the whole piece of beef and sear it on all sides until golden brown.
 - Pour in the wine (or beer) and add the boiling water.
 - Season with a little salt, close the lid, and cook under pressure for 40 minutes over low heat.
 - Once cooked, let the pressure release naturally before opening the lid.
 
Shred and Marinate:
- Remove the beef from the pot and shred it using two forks.
 - Transfer to a bowl and mix in the onion, bell pepper, olives, and parsley.
 - Add about 400ml of the reserved cooking broth to keep the meat juicy.
 - Season with salt, black pepper, lemon juice, and olive oil.
 - Stir well, cover, and let it sit to absorb the flavors.

- Serve the shredded beef inside fresh bread rolls, creating the perfect sandwich!
