- Cake:
- 4 eggs
- 2 cups granulated sugar
- 1 cup concentrated passion fruit juice
- 1/4 cup vegetable oil
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- Butter for greasing and flour for dusting
- Syrup:
- Pulp of 2 passion fruits
- 1/2 can (condensed milk measure) of concentrated passion fruit juice
- 1 can of condensed milk
Prepare the Cake Batter:
- In a blender, combine the eggs, sugar, passion fruit juice, oil, and flour. Blend until smooth.
- Add the baking powder and mix gently with a spoon.
Bake the Cake:
- Pour the batter into a greased and floured 9×13 inch baking pan.
- Preheat oven to medium heat(350°F / 180°C), and bake for 30 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
Prepare the Passion Fruit Syrup:
- Put the passion fruit pulp and the passion fruit juice in the blender, and use the pulse buttom twice.
- In a medium saucepan over medium heat, combine the passion fruit pulp with juice and condensed milk. Cook, stirring constantly, for 5 minutes, or until the syrup thickens slightly.
Assemble and Chill the Cake:
- Using a toothpick, poke holes all over the baked cake.
- Pour the passion fruit syrup evenly over the cake.
- Let the cake cool completely.
- Cut the cake into squares and wrap each square in aluminum foil.
- Refrigerate for at least 4 hours before serving.
- For an extra touch of tropical flair, garnish the cake with fresh passion fruit pulp or whipped cream before serving.
- You can also add a layer of cream cheese frosting for added richness.
