Ingredients

- 1 cup grated carrots
 - 1 cup chopped zucchini
 - ½ cup corn kernels
 - ½ cup green peas
 - ½ cup diced bell peppers (red, yellow, or green)
 - ½ cup chopped onions
 - 1 teaspoon oregano or dried herbs
 - Salt and black pepper to taste
 
Instructions
1. Prepare the Batter
- First, preheat your oven to 350°F (175°C) and grease a baking dish.
 - Then, in a blender, combine milk, oil, eggs, salt, and Parmesan cheese (if using). Blend until smooth.
 - Gradually, add the flour and baking powder, blending until you get a smooth batter.
 
2. Assemble the Pie
- Now, in a bowl, mix all the vegetables and seasonings.
 - Pour half of the batter into the greased baking dish.
 - Evenly spread the vegetable filling over the batter.
 - Finally, pour the remaining batter on top, covering the filling.
 
3. Bake the Pie
- Place the dish in the oven and bake for 35–40 minutes, or until the top is golden brown and a toothpick inserted comes out clean.
 
4. Cool and Serve
- Once baked, let the pie cool for a few minutes before slicing.
 - Serve warm as a light meal, snack, or side dish.
